  • 3 1/2 cups bread flour

  • 4 cloves garlic minced
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/2 tsp black pepper
  • Sea salt flakes for garnish

Instructions
 

  • Activate the Yeast: In a small bowl, combine warm water, sugar, and yeast. Stir gently and let sit for 5-10 minutes until frothy.
  • Mix the Dough: In a large bowl, combine bread flour and salt. Add the yeast mixture and olive oil. Mix until a dough forms.
  • Knead the Dough: Knead for 8-10 minutes by hand or 5 minutes in a stand mixer with a dough hook until smooth and elastic.
  • First Rise: Place the dough in a lightly oiled bowl. Cover with a kitchen towel and let rise in a warm spot for 1 hour or until doubled.
  • Add Garlic & Herbs: Punch down the dough. Fold in minced garlic, rosemary, thyme, and black pepper.
  • Shape the Loaf: Form the dough into a round or oval loaf. Place on a parchment-lined baking sheet.
  • Second Rise: Cover and let rise again for 30-40 minutes.
  • Bake: Preheat oven to 425°F (220°C). Brush the loaf with olive oil and sprinkle sea salt flakes on top. Bake for 25-30 minutes or until golden brown and hollow-sounding when tapped.
  • Cool and Serve: Let cool on a wire rack for 15-20 minutes before slicing.
