Ingredients
  

  • 4 large Portobello mushrooms
  • 1 tablespoon olive oil
  • 1/2 cup chopped spinach
  • 1/3 cup cream cheese
  • 1/4 cup grated Parmesan
  • 1/4 cup shredded mozzarella
  • 2 garlic cloves minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon chili flakes optional
  • 1 tablespoon fresh parsley chopped

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Clean mushrooms and remove stems.
  • Brush mushroom caps with olive oil.
  • Place them gill-side up on tray.
  • In a bowl, mix all filling ingredients.
  • Spoon filling into each mushroom evenly.
  • Cover tray with foil loosely.
  • Bake for 20 minutes, covered.
  • Uncover and bake 10 more minutes.
  • Remove from oven and serve warm.
