Ingredients
  

  • 1 lb boneless chicken breast diced
  • 1 tbsp olive oil
  • 1 onion chopped
  • 3 garlic cloves minced
  • 1 red bell pepper diced
  • 1 can black beans drained
  • 1 can corn drained
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 tsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Juice of 1 lime
  • Fresh cilantro optional
  • Avocado slices optional
  • Tortilla strips optional

Instructions
 

  • Heat oil in a large pot over medium heat.
  • Add onions and cook until soft and translucent.
  • Stir in garlic, red pepper, and chicken pieces.
  • Cook chicken until no longer pink inside.
  • Add beans, corn, and diced tomatoes.
  • Pour in chicken broth and stir well.
  • Add chili powder, cumin, and smoked paprika.
  • Season with salt, pepper, and lime juice.
  • Bring to a boil, then reduce to simmer.
  • Simmer uncovered for 20 minutes to blend flavors.
  • Taste and adjust seasoning if needed.
  • Ladle soup into bowls and garnish as desired.
