Cook noodles until al dente. Drain well.
Brown beef with onion until no pink remains.
Add garlic powder, Italian seasoning, tomato sauce. Stir well.
In a bowl, mix sour cream, cottage cheese together.
Add cooked noodles to cheese mix. Stir to coat.
Preheat oven to 350°F for the bake.
Layer half noodles in the baking dish.
Add half of the beef sauce over the noodles.
Repeat with remaining noodles and meat sauce.
Top with shredded cheddar cheese evenly.
Cover with foil and bake for 20 minutes.
Remove foil and bake for 10 minutes more.
Let it rest for 5 minutes before serving.
Garnish with fresh parsley if desired.
