Ingredients
  

  • 12 oz egg noodles
  • 1 lb ground beef
  • 1 cup sour cream
  • 1 cup cottage cheese
  • 1 can tomato sauce 15 oz
  • 1 small onion diced
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Cook noodles until al dente. Drain well.
  • Brown beef with onion until no pink remains.
  • Add garlic powder, Italian seasoning, tomato sauce. Stir well.
  • In a bowl, mix sour cream, cottage cheese together.
  • Add cooked noodles to cheese mix. Stir to coat.
  • Preheat oven to 350°F for the bake.
  • Layer half noodles in the baking dish.
  • Add half of the beef sauce over the noodles.
  • Repeat with remaining noodles and meat sauce.
  • Top with shredded cheddar cheese evenly.
  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake for 10 minutes more.
  • Let it rest for 5 minutes before serving.
  • Garnish with fresh parsley if desired.

Notes

  1. Use lean beef for less grease.
  2. Add red pepper flakes for heat.
  3. Swap cheddar with mozzarella for a stretchier top.
  4. Use Greek yogurt for lighter calories.
  5. Freeze in portions for easy future meals.
