- 12 oz linguine or spaghetti
- 1 lb large shrimp peeled and deveined
- 3 tbsp olive oil
- 4 tbsp unsalted butter
- 5 garlic cloves minced
- 1/4 tsp red pepper flakes optional
- Juice and zest of 1 lemon
- 1/4 cup dry white wine or chicken broth
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
- Freshly grated Parmesan for garnish
Cook pasta in salted water until al dente.
Reserve 1/2 cup pasta water. Drain and set aside.
Heat oil and 2 tbsp butter in a sauté pan.
Add garlic and red pepper flakes. Sauté for 1 minute.
Add shrimp. Season with salt and pepper.
Cook shrimp until pink, about 2-3 minutes per side.
Add lemon juice, zest, and white wine to pan.
Simmer 2 minutes to reduce slightly.
Return pasta to pan with shrimp mixture.
Add remaining butter and reserved pasta water.
Toss everything to coat the pasta evenly.
Sprinkle parsley and Parmesan before serving hot.
