Ingredients
  

  • 2 cans Beef broth
  • 1 ½ pounds Gemstone potatoes
  • 1 ½ pounds Pork stew meat
  • 1 can  Petite diced tomatoes
  • 1 can Green chiles (chopped)
  • 8 ounces Green chile salsa
  • 2 teaspoons  Garlic (minced)
  • 2 teaspoons Chili powder
  • 1 teaspoon  Cumin
  • ½ Onion (chopped)
  • Use cornstarch or potato flakes to thicken—your choice!

Instructions
 

  • Dice gemstone potatoes, boil until mostly done, then drain.
  • Simmer pork stew meat in beef broth with onions, garlic, and seasoning.
  • Add potatoes and the remaining ingredients to the pot.
  • Simmer for about 30 minutes.
  • Serve warm, topped with sour cream, cheese, or cilantro.

Notes

  1. Chop everything small for taste.
  2. Try marinating the meat overnight for extra flavor.
  3. Use different green chilies for more or less heat.
