  • Leeks (sliced)
  • Turnip (diced)
  • 2 tablespoons Butter
  • 6 cups Chicken or vegetable broth
  • 1 cup Heavy cream
  • Fresh chives (for garnish)

  • Salt (to taste)

Instructions
 

  • In a large pot, melt butter over medium heat. Cook chopped onion until translucent.
  • Add leeks, carrots, potatoes, and turnips. Cook for 5 minutes.
  • Pour in chicken or vegetable broth, covering the vegetables. Season with salt.
  • Bring to boil, then simmer for 20-25 minutes until tender.
  • Use an immersion blender for a smooth texture.
  • Stir in cream, and heat without boiling.
  • Adjust seasoning if needed. Ladle into bowls, and garnish with chives.
