- 4 big russet potatoes
- 4 cups cooking oil like vegetable oil
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon black pepper
- 1 teaspoon salt
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 tablespoon cornstarch optional – makes them crispier
Wash and peel the potatoes.
Cut them into thin sticks.
Soak them in cold water for 30 minutes.
Dry them with paper towels.
Mix all the spices in a bowl.
Add cornstarch to the fries (if using).
Heat the oil to 350°F (medium-high heat).
Fry the fries in small batches.
Cook for 4–5 minutes until golden.
Take them out and let the oil drain.
Sprinkle the Cajun spice mix while hot.
Serve and enjoy while crispy!
- Soak potatoes to make them crispier.
- Dry them well before frying.
- Use russet potatoes – they fry better.
