Ingredients
  

  • 4 big russet potatoes
  • 4 cups cooking oil like vegetable oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne pepper
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • ½ teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 1 tablespoon cornstarch optional – makes them crispier

Instructions
 

  • Wash and peel the potatoes.
  • Cut them into thin sticks.
  • Soak them in cold water for 30 minutes.
  • Dry them with paper towels.
  • Mix all the spices in a bowl.
  • Add cornstarch to the fries (if using).
  • Heat the oil to 350°F (medium-high heat).
  • Fry the fries in small batches.
  • Cook for 4–5 minutes until golden.
  • Take them out and let the oil drain.
  • Sprinkle the Cajun spice mix while hot.
  • Serve and enjoy while crispy!

Notes

  • Soak potatoes to make them crispier.
  • Dry them well before frying.
  • Use russet potatoes – they fry better.
  • Don’t overcrowd the pot when frying.
  • You can make the spice mix less hot.
