Add pickles, cheese, garlic, dill, and pepper.
Stir until smooth and well blended.
Lay tortillas flat on a board.
Spread filling evenly over each tortilla.
Add ham or turkey slices if using.
Roll tortillas up tightly.
Wrap each roll in plastic wrap.
Chill rolls in fridge for 1 hour.
Unwrap and slice into 1-inch pinwheels.
Arrange on a serving platter.
Serve chilled with dipping sauce.
