- 1 tbsp all-purpose flour
- ¾ cup heavy cream
- ½ cup sour cream
- 1 ½ cups shredded Monterey Jack cheese

- ½ tsp salt
- ¼ tsp black pepper
- ½ cup chopped spinach optional
- ½ cup diced tomatoes optional
- French bread or garlic toast for dipping
Heat oil and butter in a skillet.
Add onions, peppers, and sauté for 3 minutes.
Add garlic and Cajun seasoning. Stir briefly.
Stir in flour to make a light roux.
Gradually whisk in heavy cream. Stir until thick.
Lower heat and add sour cream. Mix gently.
Add cheese slowly. Stir until melted completely.
Fold in seafood. Simmer for 5 more minutes.
Add spinach and tomatoes if using. Stir again.
Transfer to fondue pot. Serve with bread.
