For the Salmon:
- 4 salmon fillets 6 oz each, skin-on or skinless
- Salt and black pepper to taste

- 1 tbsp butter
- 1 tsp paprika

- 1 cup small shrimp peeled and deveined
- 2 cloves garlic minced
- 1 tbsp olive oil
- 1 tbsp butter
- 1 cup heavy cream
- 1/3 cup grated parmesan cheese
- 1/2 tsp crushed red pepper flakes
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1 tsp fresh parsley optional garnish
Prep the Salmon: Pat salmon fillets dry with paper towels. Season both sides with salt, pepper, and paprika. Let rest while you prepare the sauce.
Make the Toowoomba Sauce: In a saucepan over medium heat, melt olive oil and butter. Add garlic and cook for 1 minute until fragrant. Stir in shrimp and cook for 2–3 minutes until pink and opaque. Lower the heat, then pour in heavy cream. Simmer gently.
Add the Cheese & Seasonings: Add parmesan, red pepper flakes, onion powder, and a pinch of salt and pepper. Stir until smooth and creamy. Let it thicken for 3–4 minutes, stirring occasionally. Remove from heat and keep warm.
Cook the Salmon: Heat olive oil and butter in a skillet over medium-high heat. Place salmon skin-side down and cook for 4–5 minutes. Flip and cook another 3–4 minutes until cooked through and flaky.
Plate and Serve: Place the cooked salmon fillets on plates. Spoon generous amounts of Toowoomba shrimp sauce over each piece. Garnish with chopped parsley if desired.
