Ingredients
  

  • 1 Packet  Taco Seasoning
  • 1 Pound Ground Beef (90/10)
  • 8 Tortillas (8 Inches) 
  • Pam Cooking Spray
  • 4 oz. Refried Beans
  • 4 oz. Cheddar Cheese
  • Cooking Oil (For Frying)

Instructions
 

  • Fully cook ground beef over medium heat in a saucepan.
  • After cooking, evenly mix in taco seasoning.
  • Melt cheese, then stir in refried beans and cheddar cheese.
  • Fill each tortilla, and roll tightly to encase the filling.
  • Lightly spray a baking sheet, and preheat the oven to 350°F (175°C).
  • Place rolled tortillas seam-side down on a baking sheet.
  • Lightly spray the tops of the tortillas with cooking spray.
  • Bake in a preheated oven for 12-15 minutes until the edges brown.
  • After cooling slightly, cut the tortillas in half.
  • Freeze halves in a ziplock bag to prevent opening.
  • Heat cooking oil to 350°F (175°C) in a large pot.
  • Fry frozen tortilla halves until golden brown, about 90 seconds.
  • Drain fried Mexi Rolls on a paper towel-lined plate.
  • Optionally, deep-fry for 3 minutes for extra crispiness.
  • Enjoy your delicious Mexi Rolls once drained.
