Ingredients
  

  • 2 cups chopped figs
  • 1 cup fresh raspberries
  • 1 orange zest and juice
  • 1 tablespoon fresh grated ginger
  • 3 cups sugar
  • 1 tablespoon lemon juice
  • 1 packet fruit pectin
  • 1/4 teaspoon salt

Instructions
 

  • Wash jars with hot water and soap.
  • Place jars in hot water to sterilize them.
  • Chop figs into small, even-sized pieces carefully.
  • Zest the orange and squeeze the fresh juice.
  • Place figs, raspberries, orange zest, and juice together.
  • Add grated ginger, lemon juice, and salt too.
  • Stir in sugar and let it sit for 10 minutes.
  • Heat mixture on medium, stirring until sugar fully dissolves.
  • Add pectin and bring mixture to a full boil.
  • Boil hard for one minute, stir to prevent sticking.
  • Remove pot from heat and skim off any foam.
  • Carefully ladle jam into sterilized jars using funnel.
  • Wipe jar rims clean, seal with lids tightly.
  • Process jars in boiling water bath for ten minutes.
  • Remove jars, let them cool, check the seals.

Notes

  1. Use fresh ripe figs for best frog jam flavor.
  2. Don’t skip lemon juice; it helps set jam.
  3. Stir constantly while boiling to avoid burning jam.
  4. Add a cinnamon stick for a warm spice note.
  5. Let jars cool undisturbed for a perfect seal.
