Ingredients
  

  • 2 large Eggs
  • 1 ¾ cups Buttermilk
  • ¼ cup Melted butter
  • 2 cups  All-purpose flour
  • 2 teaspoons  Baking powder
  • 2 tablespoons Sugar
  • Butter (for greasing the griddle)
  • 1 Pinch  Salt

Instructions
 

  • Combine baking powder, flour, sugar, and salt in a large bowl. Mix well.
  • In a separate bowl, whisk the eggs. Add melted butter and buttermilk; whisk thoroughly.
  • Gradually incorporate wet ingredients into the dry, stirring until just combined. Avoid overmixing.
  • Butter the griddle over medium heat.
  • On the griddle, pour 1/4 cup batter portions, leaving space between them.
  • Until bubbles form, flip and cook until golden brown.
  • Remove griddle cakes, keep warm, and repeat until batter is used.
  • Top with whipped cream or fresh fruit if desired.

Notes

  • Cook on medium-low heat for golden griddle cakes.
  • Use buttermilk for extra fluffiness.
