Ingredients
  

  • 4 salmon fillets skin on
  • 2 tbsp olive oil
  • Salt to taste
  • Pepper to taste
  • 1 cup heavy cream
  • 3 garlic cloves minced
  • 1/2 cup grated parmesan
  • 1 cup baby spinach
  • 1/2 cup sun-dried tomatoes
  • 1 tsp Italian seasoning
  • 1 tbsp butter
  • Fresh basil for garnish

Instructions
 

  • Pat salmon dry with paper towel.
  • Season salmon with salt and pepper.
  • Heat olive oil in skillet on medium.
  • Sear salmon skin side down first.
  • Cook salmon for 4 minutes each side.
  • Remove salmon, set aside on plate.
  • Add butter and minced garlic, sauté shortly.
  • Add sun-dried tomatoes and Italian seasoning.
  • Pour in heavy cream and parmesan slowly.
  • Stir sauce until thick and creamy.
  • Add baby spinach, let it wilt down.
  • Return salmon to the creamy sauce.
  • Spoon sauce over salmon, simmer 2 minutes.
