Pat salmon dry with paper towel.
Season salmon with salt and pepper.
Heat olive oil in skillet on medium.
Sear salmon skin side down first.
Cook salmon for 4 minutes each side.
Remove salmon, set aside on plate.
Add butter and minced garlic, sauté shortly.
Add sun-dried tomatoes and Italian seasoning.
Pour in heavy cream and parmesan slowly.
Stir sauce until thick and creamy.
Add baby spinach, let it wilt down.
Return salmon to the creamy sauce.
Spoon sauce over salmon, simmer 2 minutes.
