- 2 cups All-purpose flour
- ¾ cup Buttermilk
- 1 cup Flaked coconut
- 1 cup Walnuts (chopped)
- 1 can Pineapple with juice (crushed)
- 1 cup Raisins
- 3 large Eggs
- ¾ cup Vegetable oil
- 1 ½ cups White sugar
- 2 cups Carrots (shredded)
- 2 teaspoons Vanilla extract
- 2 teaspoons Baking soda
- 2 teaspoons Ground cinnamon
- ¼ teaspoon Salt
Grease a 9x13-inch baking pan and preheat the oven to 350°F.
In a bowl, whisk eggs and sugar until fluffy. Then add buttermilk, oil, and vanilla; mix well.
Combine flour, baking soda, cinnamon, and salt in another bowl. Gradually add to the wet mix.
Add carrots, coconut, walnuts, pineapple, and raisins; spread batter evenly.
It should take 35-40 minutes to bake, or until the toothpick comes out clean.
