Ingredients
  

  • 4 boneless chicken breasts
  • 1 cup coconut milk
  • 2 tbsp olive oil
  • 3 tbsp lime juice
  • 1 tbsp lime zest
  • 2 garlic cloves minced
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp honey
  • Fresh cilantro chopped

Instructions
 

  • Pat chicken dry and season with salt and pepper.
  • Heat olive oil in a skillet over medium-high heat.
  • Sear chicken until golden on both sides, about 4 minutes.
  • Remove chicken and lower heat to medium-low setting.
  • Add garlic and cook until fragrant, about 30 seconds only.
  • Pour in coconut milk, lime juice, honey, and cumin.
  • Stir and simmer sauce for about three to four minutes.
  • Return chicken to the skillet and coat in sauce.
  • Cook for ten minutes until chicken is fully cooked.
  • Add lime zest and chopped cilantro before serving warm.
