- 2 Eggs
- 15 -16 oz Chicken breasts
- 13 1⁄2 oz Coconut milk
- 1 cup Cornstarch
- 3⁄4 cup Sugar
- 1⁄4 cup Canola oil
- 1 tsp Cider vinegar
- 1 tsp Pepper
- 1 tsp Salt
For The Chicken:
Heat oil in a skillet. Heat the oven to 325°F.
Add salt and pepper to the chicken.
In a bowl, mix the egg with the cornstarch, then dip the chicken into it.
Cook until golden but not fully cooked.
Place on a paper towel-lined plate.
Cut into 1-2 inch pieces.
Place in a baking dish.
For The Sauce:
Whisk coconut milk, sugar, and vinegar in a bowl.
Over the chicken, pour the sauce.
Stir every 15 minutes during the baking process.
Allow to thicken for five minutes.
