  • 1/4 cup celery diced
  • 1/4 cup pickles or relish
  • Salt and pepper to taste
  • 4 slices of whole-grain bread or your choice
  • Lettuce or spinach leaves
  • Optional: paprika or garlic powder for seasoning

Instructions
 

  • Add chickpeas to a bowl.
  • Mash with a fork or potato masher.
  • Keep some chunks for texture.
  • Add mayo, mustard, and lemon juice.
  • Mix everything until creamy.
  • Stir in onions, celery, and pickles.
  • Add salt, pepper, and seasonings.
  • Toast the bread if desired.
  • Spoon mixture onto the bread.
  • Add lettuce or spinach on top.
  • Close sandwich and cut in half.
