- 4 boneless skinless chicken breasts
- Salt and black pepper to taste
- 1/2 cup all-purpose flour for dredging
- 4 tablespoons olive oil
- 4 tablespoons unsalted butter
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1/2 cup white wine
- 1/4 cup capers drained
- 2 tablespoons fresh parsley chopped
- 1/2 cup parmesan cheese grated
- 1 lemon sliced for garnish
Preheat the Oven: Set your oven to 375°F (190°C) and lightly grease a baking dish.
Prepare the Chicken: Season the chicken breasts with salt and pepper, then dredge them in flour, shaking off the excess.
Brown the Chicken: In a large frying pan, heat 2 tablespoons of olive oil and 2 tablespoons of butter over medium-high heat. Add the chicken and brown on both sides, about 3-4 minutes per side. Transfer to the baking dish.
Make the Sauce: In the same pan, add the remaining oil and butter. Stir in the chicken broth, heavy cream, and white wine, scraping up any browned bits from the pan. Bring to a boil and then reduce to a simmer, stirring in the capers and half of the parsley.
Bake: Pour the sauce over the chicken in the baking dish. Sprinkle with parmesan cheese. Bake for 20-25 minutes, until the chicken is cooked through.
Garnish and Serve: Garnish with lemon slices and the remaining parsley before serving.
- Even Cooking: Pound the chicken breasts to an even thickness to ensure uniform cooking.
- Sauce Consistency: Let the sauce simmer until slightly thickened for a rich texture.
- Quality Ingredients: Use high-quality wine and fresh cream for the best flavor.
- Oven Monitoring: Keep an eye on the chicken while it bakes to avoid overcooking.
- Resting Time: Let the chicken rest for a few minutes after baking for juicier results.
