Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 eggs beaten
  • 2 cups breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1/2 cup white wine
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1 cup sliced mushrooms
  • 4 slices of Provel cheese or mozzarella if unavailable
  • 2 cloves garlic minced
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Preparation: Preheat your oven to 350°F (175°C). Flatten the chicken breasts to even thickness using a meat hammer.
  • Breading: Season the flour with salt and pepper. Dredge each chicken breast in flour, dip into beaten eggs, and then coat with breadcrumbs mixed with Parmesan cheese.
  • Cooking the Chicken: Heat olive oil in a skillet over medium heat. Add the breaded chicken and cook until golden on each side, about 3-4 minutes per side. Transfer to a baking tray.
  • Making the Sauce: In the same skillet, add garlic and mushrooms, sauté until mushrooms are browned. Deglaze the pan with white wine, add chicken broth, and simmer until reduced by half. Stir in the heavy cream, and simmer until the sauce thickens.
  • Baking: Top each chicken breast with the sauce and a slice of cheese. Bake in the preheated oven for 15-20 minutes, or until the chicken is thoroughly cooked and the cheese is bubbly.
  • Garnishing: Sprinkle with chopped parsley before serving.

Notes

  1. Ensure chicken breasts are evenly flattened for consistent cooking.
  2. Use freshly grated Parmesan for the best flavor in the breading.
  3. Allow the sauce to thicken on the stove before adding it to the oven; this enhances the flavors.
  4. If the sauce thickens too much, thin it with a little more broth or wine.
  5. Let the dish rest for a few minutes after baking for flavors to meld.
