Ingredients
  

  • 2 cups cooked chicken shredded or cubed
  • 3 cups cooked pasta penne or rotini
  • 2 tablespoons olive oil
  • 2 cups baby spinach fresh
  • 1 cup cream cheese
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon crushed red pepper optional
  • 1/4 cup milk optional for thinning

Instructions
 

  • Heat olive oil in a large skillet.
  • Add spinach and cook until wilted.
  • Stir in cooked chicken. Mix well.
  • Add cream cheese and sour cream. Stir.
  • Add garlic, pepper, and salt. Combine evenly.
  • Mix in mozzarella and Parmesan cheese.
  • Stir until mixture becomes creamy and smooth.
  • Fold in cooked pasta gently.
  • Add milk if the sauce is too thick.
  • Simmer for 5 minutes, then serve hot.
