Ingredients
  

  • 1 cup Cooked chicken (shredded)
  • 2 large  Flour tortillas
  • 1 cup Oaxaca cheese (shredded)
  • 1/2 Red onion (thinly sliced)
  • 1 Roasted poblano pepper (seeded, peeled and sliced)
  • Vegetable oil (for frying)
  • 2 tbsp Fresh cilantro (chopped)
  • Pepper to taste
  • Salt to taste

Instructions
 

  • Prepare the filling: Mix cooked chicken with Mexican spices, salt, and pepper.
  • Assemble the Chavindecas: Place tortilla, add cheese, chicken, peppers, onion, and cilantro. Top with another tortilla, and press gently.
  • Fry the Chavindecas: Heat oil in a skillet, and cook until golden and crispy.
  • Flip and cook: Carefully flip, and cook until golden, and the cheese melts.
  • Serve: Cool, slice, and enjoy with salsa or guacamole.

Notes

  • Start by marinating the chicken for at least an hour for more flavor.
  • Use fresh herbs to make your Chavindecas taste even better.
