- 1 cup Cooked chicken (shredded)
- 2 large Flour tortillas
- 1 cup Oaxaca cheese (shredded)
- 1/2 Red onion (thinly sliced)
- 1 Roasted poblano pepper (seeded, peeled and sliced)
- Vegetable oil (for frying)
- 2 tbsp Fresh cilantro (chopped)
- Pepper to taste
- Salt to taste
Prepare the filling: Mix cooked chicken with Mexican spices, salt, and pepper.
Assemble the Chavindecas: Place tortilla, add cheese, chicken, peppers, onion, and cilantro. Top with another tortilla, and press gently.
Fry the Chavindecas: Heat oil in a skillet, and cook until golden and crispy.
Flip and cook: Carefully flip, and cook until golden, and the cheese melts.
Serve: Cool, slice, and enjoy with salsa or guacamole.
