Ingredients
  

  • 2 boneless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • 2 garlic cloves minced
  • Salt and pepper to taste
  • 3 medium tomatoes diced
  • 1 tbsp balsamic vinegar
  • ¼ cup fresh basil chopped
  • 8 oz penne pasta
  • ½ cup mozzarella shredded
  • 2 tbsp Parmesan cheese
  • ½ tsp red pepper flakes optional

Instructions
 

  • Season chicken with salt, pepper, and Italian herbs.
  • Heat olive oil in skillet over medium heat.
  • Add chicken and sear both sides until golden.
  • Cook chicken fully, then remove and rest.
  • In same pan, add garlic and tomatoes.
  • Stir gently and cook until tomatoes soften.
  • Add balsamic vinegar and cook another minute.
  • Meanwhile, boil pasta until al dente.
  • Drain and toss pasta with tomato mixture.
  • Slice chicken and layer over the pasta.
  • Sprinkle mozzarella and Parmesan on top.
  • Garnish with fresh basil and red flakes.
  • Serve warm and enjoy your dish!
